What you need:
-14oz. firm lite tofu (such as Nasoya)
-1/4 cup low sodium soy sauce
-garlic/onion powder to taste
-Chipotle Tabasco sauce or Asian chili sauce (optional)
Stir together soy sauce and seasonings in a large bowl. Gently press the block of tofu after wrapping it in paper towels. You will see a lot of water coming out, but make sure you don't press to hard as you don't want it to crumble. Cut into 1 1/2 inch cubes. Gently toss with soy sauce mixture; set aside for a few minutes while you prepare the baking sheet. Line a baking sheet with foil and spray with nonstick cooking spray. Place tofu cubes in an even layeron the baking sheet, making sure they are generously covered with the marinade. Bake at 350 degrees for 20 minutes then flip and bake an additional 10-15 minutes until golden brown. Enjoy straight from the oven as it; toss in a salad, or your favorite stir fry. It's good cold the next day for snacking! ALL protein-NO carbs.
