Fiesta Bowl

What you need:

-shredded/chopped lettuce

-diced cucumber, tomato, green onions

-Mexican rice*

-Chicken Chili Verde*

-taco meat or shrimp

-fajita chicken or beef

-roasted peppers, onions, and mushrooms

-salsa/hot sauce

-diced avocado

-fat free sour cream or plain Greek yogurt

-low fat shredded cheese

-sliced olives

-pickled jalapenos

-fresh cilantro

How to:

Mix all ingredients together in small bowl. Enjoy!

Mexican Rice

What you need:

-10oz. fresh cauliflower, grated

-1 small onion, diced

-1/2 cup salsa

-1/8 tsp. garlic powder

-3/4 tsp. salt, chili powder, cumin to taste

-1/4 tsp. pepper

How to:

In a large nonstick skillet, saute onion until tender; stir in grated cauliflower, then the remaining ingredients. Cook until cauliflower is just tender (not mushy), stirring occasionally.

Chicken Chili Verde

What you need:

-3lbs. boneless chicken breast

-14oz. green Mexican salsa

-1 onion, chopped

-1 tsp. pepper

-4 cloves garlic, minced

-1/4 cup pickled jalapenos

-2 tsp. chicken bouillon granules

-1/4 fresh cilantro, chopped

How to:

Place the chicken in a slow cooker. Combine: green salsa, onion, pepper, garlic, jalapenos and bouillon in a small bowl; pour over the chicken. Stir a little to make sure that some of the sauce gets under and between all of the chicken. Cook on LOW 6-8 hours. Once tender, shred chicken with a fork. Stir in cilantro just before serving.
